Chef Domenico Giammarella
Chef Domenico Giammarella graduated from Le Cordon Bleu Paris before refining his skills in some of Canada’s most respected pastry kitchens. His distinguished career includes roles at acclaimed establishments such as Laloux, Buca Yorkville and Alo, one of Canada’s most celebrated restaurants. Before entering the culinary world, Chef Dom studied chemical engineering, a background that continues to influence his precise approach to pastry, balancing science, creativity and artistry.
Today, Chef Dom leads Mimmo with four guiding principles: natural ingredients, seasonal excellence, minimising waste and elegance. Every pastry is thoughtfully created without unnecessary additives or preservatives, showcasing premium seasonal produce and meticulous attention to flavour, texture and presentation.
